Gevrey Chambertin - 2004 - Domaine Louis Jadot
I terreni sono calcarei con una buona proporzione di marne argillose, conferendo ai vini rotondità e potenza, oltre a una maggiore o minore profondità. La raccolta è manuale in piccole casse per preservare l'integrità del frutto. I grappoli vengono poi selezionati accuratamente a mano e diraspati. La macerazione delle uve avviene in tini aperti in legno o acciaio inox per 3-4 settimane. Durante la fermentazione, le vasche vengono pigiate due volte al giorno. L'affinamento dura circa 18 mesi in botti della nostra tonnelleria, di cui circa un terzo sono nuove.
