Pauillac is a well-regarded commune and appellation on the Médoc Peninsula in Bordeaux. It is home to some of the world's most famous and expensive red wines, wines made mainly from the Cabernet Sauvignon grape variety. Overall, however, there is still an identifiable style of Pauillac wine: full, rich and characterized by the classic cassis-and-cedarwood aromas of Cabernet Sauvignon in oak. They are typically considered to have the most powerful tannic structure of ordinary Médocs, and are often able to age for a long time in the cellar. Cabernet Sauvignon usually accounts for 50 percent of most blends.
