Chateau Le Dragon - 1989 - Sauternes
It is on the left bank of the Garonne and south of its famous tributary, the Céron, that the prestigious Sauternes appellation of controlled origin is located. Here climatic conditions combine to produce a sweet white wine of exceptional quality that is unparalleled. The morning mist that rises each summer morning to attack the vineyards to dissipate in the afternoon heat allows the growth of botrytis cinerea, noble rot, on very ripe grapes-a fungus that, when controlled, allows the concentration of sugars, acids and aromas in the very heart of the grape berries, providing their aromatic signature. Retaining most of the residual sugars, Sauternes wines are syrupy but very well balanced by the great acidity brought by the type of grape varieties used, Sémillon, Sauvignon Blanc and Muscadelle. Great wines for aging, Sauternes can be kept for several decades in the cellar.
