The limestone-clay soils and fossil-rich bedrock shape the vibrant character of these vineyards. Since 1998, Jean-Yves and his wife have revolutionized their practices, adopting organic methods in 2006 and biodynamic certification in 2012, achieving lower yields and exceptional quality. Their wines undergo separate parcel vinification, aging in a mix of foudres and barrels, followed by extended cuve refinement, capturing fresh, energetic fruit with minimal sulfur.
