Manual harvesting with grape selection and destemming without crushing precedes vinification in temperature-controlled stainless steel tanks for 21 days, followed by submerged cap post-maceration for 2 months. After racking and pressing, the wine ages for about 24 months in large barrels and non-new tonneaux. Deep ruby red, it is spicy with toasty notes, warm and full-bodied, with hints of black pepper and dried apricot, very balanced and long.
