This property has gained legendary status in the Roussillon region. The shale, clay and marly soil allows the vines to grow very deep roots, which gives the wines additional complexity. The vines are planted on areas of sedimentary limestone to the north and shale to the south that exist in overlapping vertical layers. Resolute in their respect for the environment, Gérard Gauby and his son Lionel long ago stopped using chemical treatments, replacing insecticides and pest control products with "homemade" blends of essential oils and compost. Their focus is on the elegance and freshness of the wines, and the path they have chosen would seem to be a winning one.
