Chianti Classico DOCG is the heart of the Chianti wine region , its traditional and longest-lived wine-growing area. The typical Chianti Classico wine is a ruby red wine made from Sangiovese with violet and cherry aromas and a hint of earthy spice. Chianti Classico wines must contain at least 80 percent of the Sangiovese variety. The remainder can be made from native grapes such as Canaiolo or Colorino , plus international varieties such as Cabernet Sauvigon and Merlot. Pairings include all traditional Tuscan dishes, from vegetable-based soups (Ribollita) to grilled and baked red meats. The "riserva" versions express the best in terms of structure and aromas.
