Castello Vicchiomaggio is a 140-hectare (346 acre) winery located between the cities of Florence and Siena in Tuscany. It is located in the center of the Chianti Classico area, and produces a range of DOCG wines. Castello Vicchiomaggio includes a total of 34 acres (84 hectares) of vineyards and 10 acres (25 hectares) of olive groves. Sangiovese is by far the most abundant grape variety in the vineyards and is complemented by native varieties such as Canaiolo and Colorino, as well as international varieties including Merlot and Cabernet Sauvignon. These vines are planted on south-facing slopes to ensure maximum sun exposure for optimal grape ripening. In the vineyard, the grapes are harvested by hand to prevent excess oxidation. Fermentation takes place in temperature-controlled stainless steel tanks for 12 to 15 days. The fermented juice is then filtered to remove grape skins intended for grappa production. Chianti Classico DOCG "Gran Selezione - Le Bolle" from Castello Vicchiomaggio was born from the desire to offer the public a Sangiovese "without compromise." A wine of character and longevity.
