This Chianti Classico is a wine made from 100% Sangiovese grapes, harvested in late September and rigorously selected. The grapes are destemmed and individual berries handpicked before being fermented in tanks for about three weeks, with pumping over and delestage for optimal extraction. After racking, the wine completes malolactic fermentation and is transferred to large 25 hl oak barrels for 18 months of aging, which softens the tannins and preserves the delicate fruit notes. In the glass, it is a dark, rich red; the nose releases a powerful dark cherry aroma, enhanced by floral hints. In the mouth, it offers marked acidity, balanced tannins and a pleasant softness, perfectly reflecting Capaccia's terroir.
