Biturica is the ancient Roman name for Cabernet, a grape variety already cultivated in Italy and other parts of the Roman Empire. The "Predicato di Biturica" chapter defines the area of origin, establishes the methods and times of production and provides for strict quality control of the wine. The Cabernet Sauvignon grapes, grown in the vineyards of Castello di Nipozzano, are vinified in the cellars of the castle where the wine rests for at least 18 months in small oak barrels.
