Vitovska Solo MM4 - 2004 - Vodopivec
Vitovska is a native vine of the Karst, grown on rocky soils rich in red earth. At 260 meters above sea level, with 10,500 plants per hectare grown as bushes, the vine resists the bora wind. Each plant produces about 500 grams of grapes, harvested by hand. After destemming and pressing, the grapes ferment and macerate without temperature control or the addition of yeasts, with daily punching down. The vinification is natural, without stabilizers, enzymes or additives, and the wine is bottled without filtration, expressing the pure essence of the territory and tradition.
