Biturica is the ancient Roman name for Cabernet, a grape variety already cultivated in Italy and other parts of the Roman Empire. The chapter of the "Predicate of Biturica" demarcates the area of origin, establishes the methods and times of production and provides for strict control of the quality of the wine. Cabernet Sauvignon grapes, grown in the vineyards of Castello di Nipozzano, are vinified in the castle cellars where the wine rests for at least 18 months in small oak barrels.
