Gevrey Chambertin - 2004 - Domaine Louis Jadot
The soils are calcareous with a good proportion of clay marls, giving the wines roundness and power, as well as greater or lesser depth. Harvesting is by hand in small crates to preserve the integrity of the fruit. The clusters are then carefully selected by hand and destemmed. Grapes are macerated in open wooden or stainless steel vats for 3-4 weeks. During fermentation, the vats are pressed twice a day. Aging lasts about 18 months in barrels from our cooperage, about one-third of which are new.
