Domaine Rolet, created in 1942 by Désiré Rolet, is one of the jewels in the crown of the Jura vineyard. His 4 children: Pierre, Eliane, Guy and Bernard then ensured the succession by dividing the roles within the Domaine. Over 2 generations, the Rolet family, thanks to hard work, has risen among the references of the vineyard. Its wines express all the richness of the terroir through the wide range of local grape varieties and all its appellations: Arbois, Côtes du Jura, L'Étoile and Château-Chalon. In white, Chardonnay and Savagnin (grape of the prestigious yellow wine). The first French AOC in 1936, Arbois is also the largest appellation in the Jura. The most beautiful bunches are selected and then undergo a drying period for more than six weeks allowing a beautiful natural concentration. After the grapes are pressed, a slow fermentation takes place and ends naturally when the wine reaches 15-16%. It then ages for almost 3 years in oak barrels.
