Chianti Classico DOCG is the heart of the Chianti wine region, its traditional and longest-standing viticultural area. The typical Chianti Classico wine is a ruby red wine made from Sangiovese with aromas of violets and cherries and a hint of earthy spice.
Chianti Classico wines must contain at least 80 percent of the Sangiovese variety. The remainder can be made from native grapes such as Canaiolo or Colorino , plus international varieties such as Cabernet Sauvignon and Merlot .
The pairings are all traditional Tuscan dishes, from vegetable soups (Ribollita) to grilled and baked red meats. The "riserva" versions express the best in terms of structure and aromas.
