As of 2011, there were approximately 1,855 hectares (just under 4,600 acres) of vines producing Bourgogne Rouge wines, spread across Burgundy. This is well over double the 854 hectares (2,110 acres) designated for Bourgogne Blanc, although Chardonnay represents 48 percent of plantings across Burgundy. Pinot Noir is by far the predominant grape used under the title and is listed as the only major red variety permitted under the title. The lesser-known Cesar grape is also permitted, but only in the Yonne department (which covers Chablis and a number of titles out north) in northwestern Burgundy, and can only make up to 49 percent of any wine. Chassagne Montrachet is a red wine made from the pinot noir grape, it has aromas of candied apricot, honey with notes of red fruit in alcohol.
