Domaine Pascal Jolivet is a renowned winery located in Sancerre, but it produces wines from all over the Loire region. The grapes from Sancerre are grown on limestone, siliceous and clay soils, while those from Pouilly-Fumé come from different subsoils dating back to the Ice Age. This wine, made from 100% Sauvignon Blanc grapes, has a bold, dry and fruity profile with incredible persistence on the palate.
