Brunello di Montalcino "Le Lucére" - 2018 - San Filippo
At the San Filippo estate, naturalness and quality are fundamental concepts. The work of selection begins at harvest, estimated with extreme precision through analytical monitoring of the grapes themselves. The time between harvest and crushing is extremely short. Once the must is produced, fermentation begins within the first eight hours. Maceration continues for about eight days, during which various operations of punching down and pumping over are carried out. Once fermentation is finished in stainless steel tanks, the wine is transferred to large wooden barrels where malolactic fermentation takes place. After about forty days, the wine is racked into oak barrels and barriques where it ages for several years. After this long rest, the wine is collected in large barrels and prepared for bottling and labeling with the vintage year.
