This Chianti Classico is made exclusively from Sangiovese grapes from vineyards located in Istine (Radda in Chianti), Casanova dell'Aia (Radda in Chianti), Cavarchione (Gaiole in Chianti) and to a small extent from Tibuca and Le Noci. With a total area of about 21 ha at an average altitude of 500 m a.s.l., the soils are rich in skeleton, with alternating marly limestone and clay. Planting density is 5,000 vines per hectare and management is certified organic, with Guyot training system. Harvest is by hand, followed by a 15- to 20-day alcoholic fermentation in temperature-controlled cement and stainless steel tanks. Maceration on the skins lasts 3 to 8 weeks, with malolactic fermentation in steel and cement. The wine ages for 12 months in Slavonian oak barrels and partially ages in cement casks. Average production is 60,000 bottles.
