Cervaro della Sala is named after the Monaldeschi della Cervara family, former owners of Castello della Sala in Umbria. It is a blend of Chardonnay and Grechetto grapes, renowned for its ability to age and represent the elegance of the estate. It was one of the first Italian white wines to undergo malolactic fermentation and barrel aging, with the first vintage produced in 1985. The castle is located near Orvieto, on an area of 600 hectares, 200 of which are planted with vines, at altitudes between 220 and 470 meters. The limestone and clay soils, rich in fossil shells, create ideal conditions for growing white varieties. The 2017, characterized by generally warm weather, nevertheless maintains the freshness and typical Mediterranean style of Cervaro della Sala. Notes of chamomile and flint can be perceived on the nose. The palate is savory, with the characteristic and delicate sensations of vanilla and butter blending harmoniously with hints of tropical fruit, composing a well-defined bouquet. The wine is still young, but will be able to evolve well in the years to come.
