Chianti Classico - 2021 - La Sala del Torriano
Chianti Classico D.O.C.G. is made from 100% Sangiovese grapes grown at an altitude of 200-310 meters on soils of Alberese limestone and red clay. The vineyards are spurred cordon trained with a density of 5,000 vines per hectare and a yield of 55 quintals per hectare. Harvesting takes place in mid-October with manual harvesting. Vinification involves destemming, soft crushing and short maceration in stainless steel at a controlled temperature of maximum 25°C. Cellar aging lasts 12 months, divided between French oak barrels and steel tanks, followed by 6 months in bottle. The palate is enveloping and fresh, with a soft, savory finish and delicate tannins.
