Vitovska Solo MM4 - 2004 - Vodopivec
Vitovska is an indigenous vine from the Karst region, grown on rocky soils rich in red soil. At 260 meters above sea level, with 10,500 vines per hectare grown as small trees, the vine withstands the bora wind. Each plant produces about 500 grams of grapes, harvested by hand. After destemming and crushing, the grapes ferment and macerate without temperature control or addition of yeast, with daily punching down. Vinification is natural, without stabilizers, enzymes or additives, and the wine is bottled without filtration, expressing the pure essence of terroir and tradition.
