I Capitelli - 2004 - Cantina Anselmi
I Capitelli is a wine produced in the municipalities of Monteforte and Soave, on vineyards in the Foscarino and Zoppega hills, characterized by votive capitals. The soils, varying between volcanic tufa and limestone, are home to a blend of traditional, international and hardy (piwi) vines, grown using the Guyot method. Only the ripest bunches are harvested in small plateaus and dried in airy rooms. In December, the clusters develop noble botrytis. Soft pressing takes place at Christmas, with fermentation in small Allier oak barrels and aging in steel for 8 months. Deep golden yellow with amber highlights, it offers aromas of passion fruit, apricot, honey and pear. Sweet and creamy, with good acidity and savory/mineral drive, it has a finish reminiscent of eggnog.
