As of 2011, there were about 1,855 hectares (just under 4,600 acres) of vines producing Bourgogne Rouge wines scattered throughout Burgundy. This is well over twice the 854 hectares (2,110 acres) designated for Bourgogne Blanc, although Chardonnay accounts for 48 percent of plantings throughout Burgundy. Pinot Noir is by far the predominant grape used under the title and is listed as the only major red variety allowed under the title. The lesser-known grape Cesar is also allowed, but only in the Yonne department (which covers Chablis and a number of titles outside the north) in northwestern Burgundy, and can make only up to 49 percent of any wine. Chassagne Montrachet is a red wine made from the pinot noir grape; there are aromas of candied apricot, honey with notes of red fruit under spirits.
