The grapes come from selected vineyards in Santo Stefano Roero, with calcareous-clayey soil and vines of about 30 years old, trained in Guyot. The vinification involves destemming, soft pressing and slow fermentation in steel at 14-16°C, to preserve freshness and intense fruit. The wine does not undergo malolactic fermentation and remains on the fine lees until bottling, between January and February. Straw yellow in color, it presents fresh floral aromas, citrus, melon and mineral notes. On the palate it is dry, with medium body, fresh acidity, well balanced and elegant, with good complexity and persistence.
