The grapes selected for this wine must have body, color and alcohol content ideal for long aging. Made from 50 percent Corvina, 20 percent Rondinella, 20 percent Corvinone and 10 percent other authorized grape varieties, it is hand-harvested in September and undergoes a controlled 90-day drying process. Vinification is in red with fermentation for 20-30 days in steel, followed by aging in oak barrels for 7-8 years. The wine is powerful and intense, with notes of black cherry jam, rich and dry on the palate, ideal with roasts, red meats, chocolate and soft cheeses.
