I Capitelli is a wine produced in the municipalities of Monteforte and Soave, on the vineyards of the Foscarino and Zoppega hills, characterized by votive shrines. The soils, varying between volcanic tuff and limestone, host a blend of traditional, international and resistant (piwi) vines, grown with the Guyot method. Only the ripest bunches are harvested in small plateaus and dried in airy rooms. In December, the bunches develop noble botrytis. Soft pressing takes place at Christmas, with fermentation in small Allier oak barrels and aging in steel for 8 months. An intense golden yellow with amber reflections, it offers aromas of passion fruit, apricot, honey and pear. Sweet and creamy, with good acidity and a savoury/mineral push, it has a finish that recalls zabaglione.
