The 1971 Dom Pérignon is a powerful, structured Champagne. The nuances of rose water, dried flowers and spice give the 1971 a distinctive exotic profile. The 1971 does not have the fruit depth or mid-palate richness of most of the other wines in this tasting. As a result, it begins to taste a little dry and austere as the fruit fades. Despite this, the 1971 remains a very attractive Champagne.
