The Classe 1985 wine was created by Italo as a tribute to his son Sergio, who began working in the family business that year. It takes its name from Sangioveto, an ancient term for Sangiovese, which is the main grape used in its production. After careful selection in the vineyard, the grapes are vinified at a controlled temperature, with a post-fermentation maceration on the skins for about 15 days. The wine then ages in 25-35 hectolitre French oak barrels for 15-18 months, followed by at least a year of bottle aging. It has an intense ruby red color that tends toward garnet with age, aromas of small red fruits and sweet spices, and a structured and balanced flavor.
