At the San Filippo estate, naturalness and quality are fundamental concepts. The selection process begins with the harvest, estimated with extreme precision through analytical monitoring of the grapes themselves. The time between harvesting and pressing is extremely short. Once the must has been produced, fermentation begins within the first eight hours. Maceration continues for about eight days, during which various punching down and pumping over operations are performed. Once fermentation in stainless steel tanks is complete, the wine is transferred to large wooden barrels where malolactic fermentation takes place. After about forty days, the wine is racked into barriques and oak barrels where it ages for several years. After this long rest, the wine is collected in large barrels and prepared for bottling and labelling with the year of harvest.
