Mondeserto Passito is a meditation wine made from pure Prosecco grapes grown in the hillside vineyards of Valdobbiadene DOCG, characterized by environmentally friendly management without the use of insecticides or herbicides. The grapes, sourced in part from vineyards over 40 years old and in part dating back to the early 1900s, undergo a six-month drying process on trellises and manual pressing, with one-year aging in stainless steel without filtration, following an ancient method. With an alcohol content of 15 percent, this passito is ideal with blue cheeses and foie gras, with production limited to about 2,500 bottles per year.
