The Champagne region, located in northeastern France, is famous for producing the renowned sparkling wine. Viticulture in the area is based primarily on three grape varieties: Chardonnay, Pinot Noir and Pinot Meunier. The traditional method used to produce Champagne is the "méthode champenoise." This process involves a double fermentation: the first takes place in stainless steel vats and the second in the bottle, where sugar and yeast are added for natural fermentation. During maturation, the bottles are periodically rotated and tilted, a process known as "remuage," to ensure an even distribution of sediment. The vines planted on limestone soils give the wine its distinctive complexity and finesse, creating an effervescent drink admired around the world.
