Cervaro della Sala takes its name from the Monaldeschi della Cervara family, the ancient owners of Castello della Sala in Umbria. It is a blend of Chardonnay and Grechetto grapes, renowned for its ability to age and represent the elegance of the estate. It was one of the first Italian white wines to undergo malolactic fermentation and aging in barrique, with the first vintage produced in 1985. The castle is located near Orvieto, on an area of 600 hectares, of which 200 are cultivated with vineyards, at altitudes between 220 and 470 meters. The calcareous and clayey soils, rich in fossil shells, create ideal conditions for growing white varieties. The 2017 vintage, characterized by a generally warm climate, still maintains the freshness and typical Mediterranean style of Cervaro della Sala. On the nose, notes of chamomile and flint are perceived. On the palate, it is savory, with the characteristic and delicate sensations of vanilla and butter that blend harmoniously with hints of tropical fruit, composing a well-defined bouquet. The wine is still young, but will be able to evolve well in the years to come.
