Ribolla Gialla is an indigenous grape variety of Friuli Venezia Giulia, cultivated since the 1300s, prized for its dry, pleasant character and moderate alcohol content. The name "Gialla" derives from the golden color of the berries when ripe, while the variety is distinguished by its vigor, disease resistance and late budding, with grapes rich in must that ripen quickly. With a persuasive bouquet, it recalls scents of forest, acacia and notes of chestnut and geranium leaf. Vinified in white at 18°C without malolactic fermentation, it matures the first year in steel and then in bottle, with an evolutionary potential of 3 to 5 years. Served at 14°C, it is ideal with cold hors d'oeuvres, sweet and sour sauces, velvety creams, vegetable-based pasta dishes, sautéed fish, shellfish, oysters and sea truffles. Called the "Riesling Renato del Friuli" by Vittorio Puiatti, it represents a unique interpretation in Collio, designed to express a slow and gradual evolution that sublimates its qualities over time.
