Arneis, a native Roero grape variety, best expresses its connection with the unique terroir of the area. Grown on sandy soils, a legacy of ancient seabeds rich in fossil shells, it is characterized by a marked minerality. This wine, produced with 100% Arneis grapes hand-picked in Vezza d'Alba in the first half of September, stands out for its ability to age, which enhances its refined and aristocratic character. After soft pressing without maceration on the skins, fermentation occurs slowly at 16-17°C to preserve the delicate aromas. The refinement, carried out for 6 months in steel vats, gives the wine a straw yellow color with greenish reflections and a floral bouquet of acacia, honey and chamomile, which evolves with aging into hints of hydrocarbons and flint. On the palate, Arneis is balanced, with good minerality and a floral aftertaste enriched by notes of bread crust, golden apples and pineapple. Served at 11-13°C, it is ideal with vegetable and fish appetizers, shellfish, risottos and grilled fish. Perfect for a summer dinner at sunset, it pairs splendidly with a risotto of calamari, shrimp and saffron.
