Marc de Champagne 80's - Moet & Chandon
Marc de Champagne is one of 30 French Eaux-de-Vie appellations, produced in the Champagne region. It uses the pomace, which is the skins and seeds left after pressing of Pinot Noir, Pinot Meunier and Chardonnay grape varieties. Only the dry residue is allowed to be fermented, with up to 20% Champagne lees added. Eaux-de-Vie made from grape must from the region is labelled Fine de la Marne. The result has a less fruity character than spirits distilled from the whole must, similar to Italian grappa.
