Dom Pérignon is named after the 17th-century Benedictine monk Dom Pierre Pérignon (1638-1715), who is said to have invented sparkling wine while a cellarman at Hautvillers Abbey. This is fake news, as is the idea that he was blind. However, he was the first to produce a clear still red wine, the first clear sparkling wine from red grapes (Blanc de Noir), to think about the art of blending and the timing of harvest, to promote the use of cork and Verre Anglais (strong English charcoal-fired glass), and to invent the shallow-basket Champagne press. In short, we have a lot to thank this monk for.
Since 1937, Dom Pérignon has been Moët et Chandon's prestige cuvée. My bottle of Dom Pérignon 2015 features the vibrant energy and artistry of Jean-Michel Basquiat and combines 51% Pinot Noir and 49% Chardonnay, disgorged in January 2023 and with a dosage of 4.5 g/L. Surprisingly medium-bodied, it envelops the palate with generous notes of brioche, light toastiness, white and red cherry, crystalline lemon peel and green apple, intertwined with fine yeasty notes. It all rests on a structure of subtly smoky stones and a deep layer of chalk. The finish lingers with lingering lemon peel and an elegant limestone vibrancy. This vintage has a taut and refined character, unexpected but unmistakably Dom Pérignon. (Treve Ring).
