The most classic of classics? Dom Pérignon is named after the 17th-century Benedictine monk Dom Pierre Pérignon (1638-1715), who is said to have invented sparkling wine while a cellarman at Hautvillers Abbey. This is fake news, as is the idea that he was blind. However, he was the first to produce a clear still red wine, the first clear sparkling wine from red grapes (Blanc de Noir), to think about the art of blending and the timing of harvest, to promote the use of cork and Verre Anglais (strong English charcoal-fired glass), and to invent the shallow-basket Champagne press. In short, we have a lot to thank this monk for.
Since 1937, Dom Pérignon has been Moët et Chandon's prestige cuvée. 2013 is a late vintage, harvested in October, and with climate change it may be the last time we can say that. This year's blend is 49% Pinot Noir and 51% Chardonnay, disgorged in October 2021 and dosed at 5g/L. The opening is tight, with a whiff of smoky stone and a subtle hint of mandarin oil that glides across a relatively lean palate (for a Dom, that is), with notes of yeast dough, red apple and vanilla wafers, elegantly shaped by bright lemony acidity, and a finish of marine salinity. Thinner and more minerally, less powerful than usual, 2013 (a complex vintage) is a low-fi Dom for me, though certainly enjoyable to drink now. (Three Rings).
