Rocca di Bonacciara is born from a careful selection of Merlot grapes harvested in the best company vineyards. Particular attention is paid to the vineyards through grape thinning and green operations, while in the vinification phase, the maceration lasts between 3 and 4 weeks with moderate pumping over to favor extraction. After malolactic fermentation, the wine is transferred to French oak barriques for 12 months of refinement. Subsequently, a further 12 months of refinement in the bottle follows at the Bonzara winery.
