Pernand Vergelesses - 1993 - Rollin
The harvest is done entirely by hand. The grapes are transported in small crates and then carefully selected on arrival at the winery. After a 5-6 day pre-fermentative maceration at 10°C, alcoholic fermentation begins naturally at a controlled temperature. After two to three weeks in vats, the wines are placed in oak barrels for a period of 12 months. Malolactic fermentation occurs here naturally in the spring. The nose of this wine explodes with aromas of fresh red and black fruits. The palate is broad and concentrated, supported by soft tannins and a fresh minerality.
