The 1971 Dom Pérignon is a powerful and structured Champagne. Nuances of rosewater, dried flowers and spices give the 1971 a distinctive exotic profile. The 1971 does not possess the fruit depth or mid-palate richness of most of the other wines in this tasting. As a result, it begins to seem a bit dry and austere as the fruit fades. Nevertheless, the 1971 remains a very attractive Champagne.
