Sangiovese grapes, harvested in late September, are carefully selected. After destemming, the berries pass over a vibrating board and fall into the fermentation tank. The must ferments for three weeks with pumping over and delestage, optimizing extraction. Racked, the new wine completes malolactic fermentation in another tank while the pomace is gently pressed. Once secondary fermentation is complete, the wine ages for 18 months in 25 HL oak barrels, softening the tannins and preserving the fruit notes. Capaccia's Chianti Classico has a dark red color, dark cherry aroma and floral hints, distinct acidity, balanced tannins and pleasant smoothness.
