Cannubi is a central hill in the Barolo area, where Serravallian and Tortonian soils meet, forming bluish-gray marls rich in magnesium carbonates and manganese. These soils, known as fossil Sant'Agata marls (or Toû in jargon), are composed of clays (55 percent), very fine sands (30 percent) and limestone (15 percent). Protected by the surrounding hills, Cannubi enjoys a unique microclimate that favors the cultivation of nebbiolo. The wine produced has a ruby red color with garnet highlights and an intense bouquet of rose, vanilla, spices and toasted oak, with hints of absinthe. The palate is full, elegant and austere, with soft tannins and a pleasant blend of spicy and woody notes.
