Domaine Rolet, created in 1942, by Désiré Rolet constitutes one of the flagships of the Jurassian vineyard. His 4 children-Pierre, Eliane, Guy and Bernard-have since ensured succession by dividing the roles within the Domaine. Over 2 generations, the Rolet family, thanks to hard work, has risen among the vineyard's benchmarks. Its wines decline all the richness of terroir through the wide range of local grape varieties and all its appellations: Arbois, Côtes du Jura, L'Étoile and Château-Chalon. In white, Chardonnay and Savagnin (the grape among others of the prestigious yellow wine). France's first AOC in 1936, Arbois is also the largest appellation in the Jura. The finest clusters are selected, which then undergo a drying period for more than six weeks allowing for beautiful natural concentration. After the grapes are crushed, a slow fermentation takes place ending naturally when the wine reaches 15-16%. It then ages for nearly three years in oak barrels.
