Dom Pérignon 2009, created by the famous Maison Moët & Chandon, is a vintage Champagne that embodies luxury and elegance. Named after the legendary Benedictine monk Dom Pierre Pérignon, considered the father of modern Champagne, it is produced exclusively in exceptional vintages. Grapes are sourced from the Grand Cru vineyards and Premier Cru soils of Hautvillers Abbey; the base wines are vinified in steel before being blended and undergoing a second fermentation on the lees, followed by a minimum aging period of 6 years. The 2009 Dom Pérignon is distinguished by an aromatic bouquet ranging from spicy guava and green grapefruit zest to stone fruits such as white peach and nectarine, enhanced by notes of woody vanilla and toasted brioche. The palate is rich and fleshy, yet balanced, with silky, saline sensations and a finish with slight iodine and bitter notes. Perfect paired with dishes with bold flavors and distinctive textures, such as octopus with butter marinated in Sicilian orange juice or carbonara with sea urchins.
