Marc de Champagne 80's - Moet & Chandon
Marc de Champagne is one of 30 French Eaux-de-Vie appellations produced in the Champagne region. It uses the marc, i.e., the residual skins and seeds after pressing of the Pinot Noir, Pinot Meunier and Chardonnay grape varieties. Only the dry residue can be fermented, with a maximum of 20 percent of Champagne lees added. Eaux-de-Vie made with grape must from the region is labeled Fine de la Marne. The result has a less fruity character than spirits distilled from full must, similar to Italian grappa.
