The Sangiovese grapes, harvested at the end of September, are carefully selected. After destemming, the grapes pass over a vibrating table and fall into the fermentation tank. The must ferments for three weeks with pumping over and delestage, optimizing the extraction. After being drawn off, the new wine completes malolactic fermentation in another tank, while the marc is gently pressed. Once the secondary fermentation is complete, the wine ages for 18 months in 25 HL oak barrels, softening the tannins and preserving the fruity notes. The Chianti Classico di Capaccia has a dark red color, aroma of dark cherry and floral hints, marked acidity, balanced tannins and pleasant softness.
