Chianti Classico - 2021 - The Torriano Hall
Chianti Classico DOCG is produced with 100% Sangiovese grapes grown at an altitude of 200-310 meters on soils of Alberese limestone and red clay. The vineyards are trained with spurred cordon with a density of 5,000 vines per hectare and a yield of 55 quintals per hectare. The harvest takes place in mid-October with manual picking. The vinification involves destemming, soft pressing and short maceration in steel at a controlled temperature of maximum 25°C. The aging in the cellar lasts 12 months, divided between French oak barrels and steel tanks, followed by 6 months in the bottle. On the palate it is enveloping and fresh, with a soft, savoury finish and delicate tannins.
