Château-Chalon is a name which is considered the unofficial grand cru for the famous vin jaune ("yellow wine") of the Jura region of eastern France. The title takes its name from Château-Chalon, a hilltop village on the Premier Plateau. Its vineyards are located on the slopes below. Château-Chalon wine must be produced exclusively from the Savagnin grape variety. The grapes must be harvested  in tins (but not baptized) to ensure maximum maturity and flavor. wines tend to show high acidity which is indicative of their age.
